Lotus Biscoff Ice Cream Sammies

This is what your Lotus Biscoff dreams are made of: creamy Lotus Biscoff ice cream meets crunchy Lotus Biscoff cookie in this easy-to-make dessert that is sure to be a crowd pleaser.

For 10 people

• 1/2 pint Lotus Biscoff Original Ice Cream
• 20 individual Lotus Biscoff Cookies
• 1 bag (11.5oz) milk chocolate chips
• 1 cup finely chopped hazelnuts
• 2 Tbsp coconut oil

    Scoop 2-3 tbsps of Lotus Biscoff Original Ice Cream onto one Lotus Biscoff cookie then place a second cookie on top, lightly pressing down. Repeat 9 times until all cookie sandwiches are filled.

    Place sandwiches on a plate and freeze for 10 minutes.

    Meanwhile, pour a bag of milk chocolate chips in a small saucepan and heat on low, stirring frequently.

    When chocolate chips are almost melted, stir in coconut oil until fully melted in. Remove melted chocolate from heat.

    Remove ice cream sandwiches from freezer. One by one, dip a half of the sandwich in the chocolate, roll in the chopped hazelnuts, and lay it back on the plate.

    When finished, refreeze for 5 minutes or until chocolate hardens and enjoy!
